It's nearly Valentine's Day. This year instead of buying a pre-packaged heart-shaped box of chocolate, try making your own instead. Below is my super easy recipe for chocolate bark.
Chocolate Bark
1.5 c. Total cereal
1 c. dried cherries or dried cranberries, roughly chopped up
2 c. dark chocolate (60% cocoa is good)
½ c. white chocolate
½ c. nuts, optional (pecans or walnuts)
Melt the dark chocolate in a metal bowl on the top of a double boiler set over simmering water, stirring until smooth. Melt the white chocolate separately, following the same directions. Reserve both for later use.
In a small bowl, combine the cereal and dried berries and mix together.
Stir them into the dark chocolate. Using a spatula, spread the mixture to about a 1/2-inch thickness over a piece of parchment paper on a cookie sheet.
Refrigerate for one half hour. The chocolate will start to harden. Remove from refrigerator and then drizzle the white chocolate on top of the dark chocolate and return to refrigerator for an additional 45 minutes.
Remove from refrigerator and break it into pieces. Store the bark in an airtight container in the refrigerator for up to a month.
