Black Bean Cakes with Mango Salsa

This dish is a great vegan option, made with nutritious black beans and spiced with smoky cumin and cayenne pepper. Served with a fresh mango and red pepper salsa.

Black Bean Cakes
Ingredients: 
4 ¾ pounds canned black beans
¼ c. chopped fresh cilantro
¼ c. small diced red onion
1 T. ground cumin
1 t. allspice
2 t. minced garlic
¼ t. ground red cayenne pepper
3 T. water
½ t. kosher salt
¾ c. panko bread crumbs
3 T. olive oil
Directions: 

1. Drain and rinse black beans 2. Smash black beans with your hands or the back of a metal ladle 3. Add the rest of the ingredients except the panko bread crumbs and mix well with hands or in a food processor 4. Season with salt 5. Divide mixture into 20 equal portions and form into patties 6. Coat each patty in the breadcrumbs 7. Heat olive oil in a pan and lightly pan fry each side of the patty for 2 minutes 8. Serve with mango salsa (see recipe below)

Mango Salsa
Ingredients: 
2 fresh mangos peeled, pitted and diced
3 T. small diced red onion
3 T. small diced red pepper
1 t. chopped fresh ginger
4 t. small diced fresh jalapeno
2 T. chopped fresh cilantro
1 T. fresh squeezed lime juice
Directions: 

1. mix all ingredients together 2. let stand for 1 hour for flavors to marry and then serve with black bean cakes
